Super Healthy Raw Spring Salad
I just made up this recipe this evening. So happy it turned out so delicious! It's raw, vegan, vegetarian, and super healthy, and immune-boosting (from the ginger and beets)! Enjoy it as a side with beans, tofu, chicken or fish. You can even add it atop a bed of spinach.
3 small beets or 1 large beet, washed, peeled and diced
3-3 inch stems from broccoli (yes you can eat the stem, it's very nutritious!), peeled and diced
1-1 to 2 inch piece of ginger root, peeled and chopped
3 stalks of celery, chopped
2 carrots, peeled and diced
5 white buttom mushrooms or baby portabellas, wiped clean and diced
2 clementines or oranges, peeled and chopped
approx. 1/4 cup of parsley, washed and chopped
approx. 2 TBLSP fresh dill, washed and chopped
approx. 2 TBLSP fresh sqeezed orange juice
pinch of salt
Combine all above ingredients and enjoy. If it's a little too peppery (from the ginger) for your taste, add a little more chopped clementine or orange.
