Today is my son Joey's 8th birthday. He requested that I make this cake, called the Triple-Chocolate Celebration cake. I've only made it twice before - for my mother's 60th birthday and for my cousin's baby shower. It takes two days to make, there are many steps, and is not exactly healthy, but Joey loves it. So I'm making it again, because it's okay to indulge sometimes! This is a delicious and very special treat - and to make a special dessert from scratch has something extra in it than a cake that comes from a store or bakery - it has LOVE. And we could all indulge in a little extra love. Try making this cake sometime - just make sure you have a crowd to finish it off!
